CORONA SELTZERITA X BAKED MINI CHEESY BEEF TAQUITOS
Roll up on Cinco with crispy mini beef taquitos! Traditionally deep-fried, this baked version of taquitos is super easy and equally tasty. - 1 package Old El Paso™ Barbacoa Beef Street Taco Kit
- 1/2 lb ground beef (at least 80% lean)
- 1/3 cup water
- 1 cup Old El Paso™ Shredded 4 Cheese Mexican Blend (4 oz)
- 1/4 cup sliced green onions (4 medium)
- 2 tablespoons chopped fresh cilantro leaves
- Lime wedges, if desired

- Heat oven to 425°F. Line sheet pan with cooking parchment paper. In small bowl, mix Old El Paso™ Crema Mexicana and 1 tablespoon of the taco seasoning mix (from taco kit).
- In 10-inch nonstick skillet, cook beef over medium-high heat 4 to 6 minutes, stirring frequently, until thoroughly cooked; drain. Stir in water and remaining 2 tablespoons of the taco seasoning mix (from taco kit); heat to boiling. Reduce heat; simmer uncovered 30 to 90 seconds, stirring frequently, until thickened. Remove from heat. Let cool 5 minutes; stir in cheese and green onions.
- Place about 2 tablespoons beef mixture on bottom third of each tortilla (from taco kit). Roll up tightly; place seam-side down in pan, about 1 inch apart. Bake 7 to 9 minutes or until filling is hot (at least 165°F) and taquitos are crispy.
- Serve with mild salsa verde sauce (from taco kit) and crema mixture. Top with cilantro. Serve with lime wedges.
